Gluten Free Cookie Butter
I’ve heard so much about Trader Joe’s Cookie Butter but it’s full of glutens. It’s also not all that healthy. I was really excited to find this “healthified” and gluten free version over at The Artists Plate along with the nutritional differences. So, I decided to make it myself!
I was really surprised at how easy it was!
Ingredients:
- 1.5 cups of roasted peanuts
- 6 tsp stevia
- 1 tsp pumpkin spice
- 1/2 tsp cinnamon
- 1/4 tsp ginger
- 1/4 tsp nutmeg
- salt to taste
Directions
- Put all the ingredients into a food processor.
- Blend for 3 to 5 minutes.
It really is that easy!
I will let you know I got a little panicked at first because it made a fine powder, but if you let it go the full 3 to 5 minutes it will turn to the cookie butter consistency you see pictured above.
