Crockpot Taco Soup
I love easy meals and I especially love using my crock pot. There’s something so fantastic in adding ingredients into a bowl, turning it on, and coming home to amazing smells that indicate dinner is ready. I’ve been so busy the last few months that easy dinners have been my go to.
I want to share one of my favorites, Crockpot Taco Soup. It’s so easy to make and it tastes delicious. I’m only feeding my husband and I now so I’ve learned to make smaller portions. I found an adorable crockpot that is perfect for just the two of us.
I start with a quarter pound of ground meat and brown it. I add a tablespoon of taco seasoning. You can add more or less but I have found 1 tbsp works best for us.
After the meat is cooked you add it to the crockpot along with 1/3 cup corn, 1/3 cup black beans, 1/3 cup beef broth, 1/3 cup diced tomatoes (I like using the fire roasted ones), 1/3 cup water, and a dash of cayenne pepper (more or less depending on how hot you like things).
You then turn the crockpot to low for 6 hours. How easy is that? While it’s cooking you could be getting things done or spending time with your family. You could even nap or read a book! Be prepared, the house will smell very good!
I top mine with fritos and shredded cheese. Enjoy!
Ingredients (for smaller crockpot – serves approximately 2 to 3)
- 1/4 pound ground meat
- 1 tbsp taco seasoning
- 1/3 cup corn
- 1/3 cup black beans
- 1/3 cup diced tomatoes
- 1/3 cup beef broth
- 1/3 cup water
Directions:
- Brown ground meat and add 1 tbsp taco seasoning.
- Combine seasoned meat and remainder of ingredients in crockpot. Turn to low for 6 hours.
- Top with choice of chips (fritos, doritos, cheese, etc)
- Enjoy!
Ingredients (for larger crockpot – serves approximately 8)
- 1 pound ground meat
- 1 package taco seasoning
- 1 15.25 can of corn
- 1 15 oz can of black beans
- 1 14.5 oz can of beef broth
- 1 14.5 oz can diced tomatoes
- 1/3 cup water
Directions:
- Brown ground meat and add taco seasoning.
- Combine seasoned meat and remainder of ingredients in crockpot. Turn to low for 6 hours.
- Top with choice of chips (fritos, doritos, cheese, etc)
- Enjoy!

My soup making methods include dumping a bunch of things in and it is never the same but always yummy. 🙂 And I use a big crockpot and freeze the extra for those days when I need a quick meal. Yours looks pretty good even on a blistering hot day like today!
