10 Minute Salsa and Queso for Cinco de Mayo
I grew up in south Florida which is really a melting pot full of cultural diversity. I love that I had the opportunity to grow up learning about others ethnicities, cultures, and tasting food from all over the world. Some of my favorite cuisine is Mexican. I love really good Mexican food. At times it can be a challenge to find diverse food here in the midwest.
I was really exicted to find the DelimexFiesta.com line when I was at Walmart. The were in the center bin between the meat and freezer aisles.
I went with the taquitos and tacos. Delimex products, traditional Mexican favorites, are the perfect way to spice up your taco bar for an at home Happier Hour this Cinco de Mayo!
I love that they only take 11 minutes to make in the oven and I have two simple recipes that can be made in under 11 minutes.
For the salsa I just combined the following ingredients in the blender:
- 14 oz can diced tomatoes
- 10 oz can Rotel
- 1/2 onion, chopped
- 1 clove garlic, peeled and crushed
- 1 teaspoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon cumin
- juice of one lime
Once combined, turn the blender on briefly and blend together.
Another one of my faves is Restaurant style queso. It’s so tasty and is also very easy to make. Over medium low heat combine 1.25 lb white american cheese and 2/3 cup whole milk until melted together. Remove from heat and add in 1/2 cup cold water and 1/4 cup diced green chiles. Mix thoroughly.
My dips were ready in the same amount of time it took to cook my tacos and taquitos. Both the cheese and beef were delicious.
This was so good and totally brought back memories of grabbing tacos from a street vendor and walking down the street during Cinco de Mayo celebrations.

Looks delicious and simple. Are the Delimex taquitos like crispitos? If so, I’ll have to try them sometime – like you said, who make a great starter for Cinco De Mayo meal!
