Paleo Fall Salad

Ingredients:

  • Spring lettuce
  • 1 cucumber
  • 1/2 of cup of pecans
  • 1/4 cup of craisins
  • 1 can of tuna or 5oz of chicken
  • 1oz of balsamic vinegar and olive oil mixed for dressing
Directions:
 
This is an easy quick meal packed full of goodness. Hope you enjoy!

    As a general rule – at least until VERY recently that I would never even consider anything called the Paleo Diet – just the name conjured up images of wild cavemen – crazed with starvation – wolfing down the huge chunk or still bleeding meat from a fresh, hard-earned killed OR (a little less dramatic/graphic) a heartless, power-crazed Medieval king (tyrant) gnawing on an enormous roasted leg of antelope or veal as the peasants he lords live in near starvation…

    Or maybe just a dinner at Medieval Times…

    Anyway, after reading numerous recipes, menus at GOOD recents and yes, also posts from blogger like YOU – who I trust (!) – I’m willing to take a second look and give it an openminded chance.

    I must say this recipes sounds /looks VERY tempting – and healthy too. Thanks Donna!
