Homemade Hot Pockets
Hot Pockets seemed to fill my freezer when I was in college and they went on sale. I had bought them not that long ago and for some reason they didn’t taste as good as I remembered. They weren’t very filling.
I decided to make a version of my own and went with a cheeseburger version since I have lots of Skyview Beef on hand.
I started by sautéing onions and browning the ground meat then adding in a mixture of cream cheese, ketchup, BBQ sauce, yellow mustard, Worcestershire sauce, and an egg white (exact amounts below). I mixed up the mixture until the cream cheese was melted and evenly dispersed through the meat.
I bought a package of refrigerated biscuits (your choice of flavor) and flattened them individually. I then added a spoonful of my meat mixture. You can stuff them as full as you’d like as long as the dough will close around the mixture.
I then sprinkled shredded cheese on top. I used the three cheese variation.
I folded the dough around the filling and put them on parchment paper seam side down. I cooked them in a preheated oven and cooked them for 20 minutes at 375 degrees.
Your oven temp may vary. You want them to be golden brown like this.
Isn’t that beautiful?!
They’re delicious too! My husband is a huge fan and if I’m going out of town or won’t be home for dinner I try to keep some of these frozen. He says they’re great reheated.
