“Fried” Ice Cream

When I think of summer I think of sunshine, being outside, and the fair. I think we hit a minimum of 4 county fairs each summer plus the Iowa State Fair. When I think about the fair I think about everything being fried. If it can go on a stick they fry it. One of my favorite fried foods is fried ice cream. Our local Mexican restaurant serves it.
Fried ice cream is a dessert made from a breaded scoop of ice cream that is quickly deep-fried creating a warm, crispy shell around the still-cold ice cream. Now I decided frying my ice cream at home probably wouldn’t be one of my best ideas. That’s why this is “fried” ice cream.
Here’s my favorite part, it takes a total of two ingredients! That’s it. You start with pretzels and crush them. This is lots of fun for getting little ones involved. You can put them in a baggie and roll a rolling pin over them. I just toss them in my food processor and pulse them to smaller chunks. then you roll a ball of ice cream in the pretzels.
You can serve as is or drizzle toppings over it. I love caramel with the sweet and salty. It’s super easy and such a fun and delicious dessert. It’s perfect for a summer day or any day really.

What a cute idea!!! I’ve not tried fried ice cream at the country fairs, and I’d be leery of trying the full-fledged version at home, this is a good way to have the concept without losing your nerves!

My favorite part of summer is the fun with family and friends; the picnics, barbecues, camping, and road trips. Everyone seems more relaxed in the summertime.
