Veggie Rancheros

Ingredients
  • 3 red potatoes, sliced
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 medium onion, chopped and diced
  • 1 green pepper, sliced
  • 1 tbsp coconut oil, melted
  • 1 teas chili powder
  • GF tortillas
  • salsa
  • shredded cheese
  • cilantro
  • sour cream
Instructions
  1. Heat oven to 400 degrees.
  2. In a large bowl, toss the potatoes, zucchini, squash, onion, and pepper.
  3. Add chili powder, salt and pepper, toss to coat, and spread onto a baking sheet.
  4. Bake 20 minutes, stir and bake another 20 minutes until tender and browned.
  5. Prepare tortillas as directed.
  6. Fill tortillas with veges.
  7. Top with cheese, salsa, and cilantro as desired.
