There is something so comforting about Mac and Cheese. I’m not sure what it is about it. Maybe it’s because we didn’t get it all the time when we were kids so it’s an extra special treat. It’s warm and cheesy – what’s not to like?  I’ve been able to eat most pasta meals gluten free now with all the great gluten free options.  Cheese however is a trigger food for me and causes me to gain weight more than other foods. That’s probably why I like it so much.  I needed to come up with a cheese free mac and cheese recipe. Cheese free Mac and CHEESE? Yes! And honestly, I think it’s even better!

Look friends, no cheese! In fact, my ingredients may surprise you.  I started by dicing up 1 and 1/2 cups of cauliflower and 1 and 1/2 cups of sweet potatoes and roasted them. (375 degrees for about 25 minutes)

While the cauliflower and sweet potatoes are roasting, cook your pasta.  Any gluten free pasta will work. I like the spirals :)

In a blender or food processor combine 3/4 cup almond milk, 1/4 cup EVOO, 1 clove garlic, 1 tsp salt, 1 tsp onion powder, 1 tbsp dijon mustard, and 1/2 tsp paprika.  When your veggies are done roasting, add them to the mix.

Combine it until smooth.  Then pour it over your drained pasta and mix.

Ingredients
  • 9 to 12 oz gluten free pasta
  • 1 and ½ c cauliflower
  • 1 and ½ c sweet potato
  • 1 cup nutritional yeast
  • ¾ c almond milk
  • ¼ c EVOO (extra virgin olive oil)
  • 1 clove garlic
  • 1 tsp salt
  • 1 tsp onion powder
  • 1 tbsp dijon mustard
  • ½ tsp paprika
  • parsley
Instructions
  1. Dice cauliflower and sweet potatoes. Roast.
  2. Cook pasta as directed.
  3. Mix remaining ingredients in blender or food processor. Add veggies when done roasting.
  4. Mix sauce and pasta. Top with parsley.
  5. Enjoy!

I always start with my greens first.  It helps when blending the smoothie.  I uses a handful (approx 1 cup) of spinach and blend it with 1 cup of water until I have a green liquid. I add 1 tbsp of flax seed and 1/2 a scoop of protein powder. I love the Garden of Life Raw Organic Protein. It’s gluten free and powder and helps with staying full.

Then I add my fruit one at a time.  I used 1/2 cup of pineapple chunks, 1 cup of peaches, and 1 banana.  You can also add stevia if the spinach taste is too strong.  You will get used to it.  I don’t use any stevia now.  Then you just enjoy!! It’s awesome.

First, I preheated the oven to 350 degrees and started making the cake.  I mixed 2 cups of gluten free flour, 3/4 cup of cocoa, 1 1/2 tsp baking soda, and 1/2 tsp salt.

Next I combined 1 2/3 cups Kefir and 2 tsp vanilla in a separate bowl.  I mixed it completely and set it aside.

I then mixed up 1 3/4 cup granulated sugar and 1/2 c butter softened.  Once that was mixed, I added 3 eggs.  (You could also use 3/4 c egg substitute if preferred). I used a hand blender on medium speed until it was blended smooth.

Now, you’re going to want to add in the other ingredients.  I alternated them.  I added some of the cocoa mixture and mixed, then added some of the Kefir mixture and mixed.  I kept alternating.  I made sure to start and end with the cocoa mixture.

Pour your batter into a greased pan and bake for about 38 minutes.

Let your cake cool.  While it’s cooling you can make the frosting.

I mixed 1/2 cup softened tub-style cream cheese with 3 tbsp of almond milk until blended.  While I was mixing it I was also melting 3 ounces of semisweet chocolate.

I also like Oregano and Nutritional Yeast .   If you’re not vegan or dairy free you could add cheese. That is why I use the Nutritional Yeast.  It gives it a cheesy taste.

  • 1 cup of water

1. Mix the water and spinach first. I recommend always doing this when you make a green smoothie. It’s easier to blend in the other ingredients after. I use a Nutri Bullet System.

*Optional* I add in 1 tablespoon of Ground Flax Seeds in all my smoothies. I usually add half a scoop of protein powder, but omit it in this one because of the almond butter.

  • Bananas are a great source of potassium and vitamin C.
  • Pears have antioxidant, anti-inflammatory flavonoids, and potentially anti-cancer phytonutrients like cinnamic acids. The skin of the pear has also been show to contain about half of the pear’s total dietary fiber.
  • Almonds reduce heart attack risk and lower “bad” cholesterol.

I have found my new favorite snack food and it could not be easier!  It also costs less than $1 to make which is an added bonus.  You can pick up a can of chickpeas (also called garbanzo beans) for about $0.79 at the market.

1. Preheat oven to 400 degrees.

2. Rinse beans and drain them. Then spread them on a baking pan and bake for 45 minutes, stirring every 15 minutes.

3. Enjoy!

I enjoy them plain and seasoned. My favorite seasoning is a buffalo flavored one, I sprinkle the following on the chickpeas before baking:

  • 1 tbsp canola oil
  • 3 tbsp hot sauce (I used Frank’s)
  • 1/2 tsp garlic powder
  • pinch of salt

You can add all sorts of seasonings.  These little guys are so delicious!

I’ve been craving a really good dip but so many were full of dairy or had glutens.  I spent several hours some time Pinterest and took bits and pieces of recipes and came up with this!  It is a keeper for sure!

What you’ll need:

  • half an eggplant
  • olive oil
  • sea salt
  • 1.5 cups almond milk
  • 2 tbsp nutritional yeast
  • 1/4 tsp minced garlic
  • 1 tsp cumin
  • 1 tsp chili powder

1. Slice eggplant into rounds approximately 1/4 to 1/2 inch slice. Sprinkle salt on both sides and arrange in a colander for about 10 to 15 minutes .

2. Rinse with cool water then pat dry.

3. Turn on the broiler.  Arrange the eggplant on a cookie sheet with tin foil.  Spray with oil and lightly salt.

4. Broil 5 minutes on each side until they are golden brown.

5. Cover with tin foil and let the eggplant steam for about 5 more minutes.  Peel the skin off the rounds.

6. Mix eggplant, almond milk, nutritional yeast, garlic, cumin, and chili powder in food processor or blender.

7. Season with salt and pepper.

It was a little chunkier than I would have liked, but tasted amazing! My kitchen smelled delicious too! I combined it with salsa on Nut Thins and it was so good!  I’ve put it on just about everything. It is good hot or cold but I prefer it warmed up.

My secret weapon to healthy buffalo wings is cauliflower! Yes, you read that right. Trust me these tasted just like buffalo chicken nuggets. I don’t know how but the cauliflower has super powers like that.

First, heat your oven to 450 degrees.

Next fill two bowls; one with almond milk and the other with gluten free flour. I used King Arthur Gluten Free Multipurpose Flour.  Break the cauliflower off into pieces then dunk in the almond milk then flour and place onto a baking sheet.

Bake the cauliflower for about 15 to 20 minutes.

While it’s baking you can put together the wing sauce.

  • 3 tbs EVOO
  • 1/4 cup hot sauce, I used Frank’s
  • 2 tsp chili powder
  • 1/2 tsp cayenne pepper
  • 1 and 1/2 tsp brown sugar
  • 1/8 tsp garlic power
  • 1/4 tsp paprika
  • 1/4 tsp cumin
  • 1/2 tsp salt

Mix all the ingredients together. I found it was easy to stir them up in a tupperware container. I even put the lid on and shook it so it all mixed together.

After the 15 to 20 min, pour the sauce over the cauliflower and return to bake 5 more minutes.

After that flip them over and bake an additional 5 minutes.

Buffalo Cauliflower Bites
 
Ingredients
  • cauliflower
  • almond milk
  • gluten free flour
  • 3 tbs EVOO
  • ¼ cup hot sauce, I used Frank's
  • 2 tsp chili powder
  • ½ tsp cayenne pepper
  • 1 and ½ tsp brown sugar
  • ⅛ tsp garlic power
  • ¼ tsp paprika
  • ¼ tsp cumin
  • ½ tsp salt
Instructions
  1. Preheat oven to 450 degrees
  2. Break up cauliflower and dip into milk then flour. Place on greased baking pan.
  3. Cook for 15 to 20 minutes.
  4. Mix remaining ingredients together for the sauce.
  5. After the cauliflower is done baking, pour sauce over florets and bake another 5 minutes.
  6. Flip florets and bake an addition 5 minutes.
  7. Serve and enjoy!

I think this idea is so cool to cook with restorative recipes. It totally makes sense. I know I wouldn’t know where to start, so this book would be awesome!  Read on to find out more.

I was asked to review a book called, The Ingredients Matter: India by Urmi M Patel, M.S., Hina Balar, B.E. and Shilpa P. Saxena, MD. When I realized this was much more than a cookbook, and concentrated on using spices in the recipes for healing, I was thrilled to see what this book had to say. I love Indian cooking and the spices mystify me. I plan on using Indian spices in the kitchen to continue my healthy living!

This book’s recipes are authentic Indian cuisine, but even more interesting is that Indian spices used in cooking are described for their healing properties and nutrients! Each ingredient has a special function in our body and there is a short tutorial about each ingredient highlighted in each recipe! How cool is that. The authors explain how the spices used affect the digestive system and in turn how that helps promote good health.

The book is divided into the following sections: Light Fare, Main Dishes, Gluten Free Breads, Accompaniments, Desserts, Energy Nut Bars and Beverages all of which are Gluten-Free and can be made Dairy-Free and Vegan!

I have been very fortunate to have some amazing friends in my life and I’m extremely  fortunate to have the close girl friends I have now. They’re the best friends ever and I’m not just saying that, they really are. These are the type of friends that will not only be there for you to cheer you on and encourage you (they are very good at that) but they’re the ones that will cry with you and be there for you when you need it. Another wonderful attribute is they love they same silly stuff I do.

We love baking and we love bundt cakes. It may be silly but it’s our thing.  In fact we just had our second annual Mega Bundt. What is a Mega Bundt? It’s pure awesomeness.  Basically  it’s a huge potluck and everything you make has to be made in a bundt pan or served in a bundt pan. Last year we had t-shirts made and this year we made aprons.

Okay, so it may be a “nerdy cool” but I love that we are not afraid to be ourselves with each other and we always have tons of fun.

This year I decided to make a mini bundt dessert. I found some inspiration over at Love from the Oven.  I decided to make Chocolate Mini Bundts with homemade chocolate ganache and caramel buttercream frosting.

I started with gluten free chocolate cake mix. You can use your favorite chocolate cake mix. I use the King Arthur Flour GF Chocolate Cake Mix.  I baked them in a Mini Bundt Cupcake Pan.

Once the mini bundts were cooled I filled the inside with caramel. Then I made the chocolate ganache.

Ingredients for Chocolate Ganache

  • 8 oz of semisweet or bittersweet chocolate
  • 3/4 cup heavy whipping cream
  • 2 tablespoons unsalted butter

Heat the cream and butter in a small saucepan over medium heat. You can also do this in a microwave. Bring just to a boil. Immediately pour the boiling cream over the chocolate. Allow it to stand for a few minutes with out stirring.

Stir gently with a spoon or whisk.  It’s important not to get air in the ganache while stirring. Stir until smooth.

I then covered each of the mini bundts with the ganache and sprinkled them with chocolate sprinkles.

After that comes the caramel buttercream frosting.

I mixed caramel syrup into Betty Crocker Whipped Butter Cream Frosting.

Then I dolloped the frosting on each mini bundt and topped them with mini chocolate chips.

I made three dozen of them and there were none left.  This is one I’ll make again and again.
