Tasty Thursday – Grilled Bananas

Grilled Bananas

Ingredients:

  • 1 ripe banana
  • fresh shredded coconut
  • mini semi-sweet dark chocolate chips
  • strawberries, chopped
Directions:
1. Cut the banana peel down the middle from end to end, with the stem facing up.
2. Put the coconut and chocolate in the peel so it doesn’t fall in the grill.
3. Place it directly on the grill and cook on medium heat for 5-7 minutes.
4. Top with the strawberries.

Tasty Tuesday – Avocado and Chicken Stuffed Tomato

 

Avocado and Chicken Stuffed Tomato

Ingredients:

  • 4 1/2 to 5 pound whole chicken
  • 4 ripe avocados
  • 4 slices of applewood bacon, cooked and chopped

Preparing the chicken:

  • 1 lemon, cut in half
  • Sea salt
  • Dried parsley
  • Pepper
  • 2 – 4 garlic bulbs

Directions:

1. Preheat oven to 400 degrees.
2. Remove the giblet from the chicken.
3. Rinse the chicken and dry it well with paper towels.
4. Stuff the cavity of the chicken with the halved lemon.
5. Generously sprinkle the entire chicken with plenty of sea salt, dried parsley and pepper.
6. Place the chicken, breast side up, in a roasting pan.
7. Cut the tops of the garlic bulbs to expose the cloves and set aside.
8. Roast the bird uncovered in the preheated oven for 30 minutes, add the garlic bulbs to the roasting pan next to the chicken and cook for another 45 minutes to an hour.  Eat with the roasted garlic spread on pieces of chicken.

1. Cut up the chicken and avocados.
2. Mix avocados, bacon and chicken together in a bowl.
3. In a separate bowl, mix equal parts of gluten free ranch and chipotle sauce.
4. Plate the tomatoes and stuff them with the avocado, chicken and bacon mix.
5. Drizzle the top with the chipotle ranch and serve.

Gluten Free Crockpot Mac N Cheese

Ingredients:

  • 1/2 lb GF macaroni
  • 4 c milk
  • 2 eggs
  • 4 c cheese
  • 1/2 tea salt
  • 1/2 tea pepper
  • 1 tsp yellow mustard

Directions:

1. Put uncooked macaroni into crockpot.
2. Mix milk, eggs, salt, pepper, and mustard and then pour over macaroni.
3. Top with cheese, mix.
4. Cook on low 2 to 5 hours.
5. I mix mine every hour approximately until desired tenderness.

Gluten Free Philly Cheesesteak

  • 3-4 green peppers (1 pepper feeds one person)
  • 1 whole onion, chopped fine
  • 1 ½ cups of mushrooms, chopped fine
  • 1 lb of your choice of steak or roast beef, cut fine
  • organic diced tomatoes
  • 1 cup of mozzarella cheese

Directions:

1. Mix meat, onions, mushrooms and shredded cheese gently in a bowl.
2. Cut top off of green peppers and place mixture inside.
3. Top with diced tomatoes.
4. Place stuffed peppers upright in glass dish and cook for 30 minutes on 350 degrees.
5. Pull peppers out and top with a mozzarella slice and cook for 5 more minutes or until cheese is bubbly.

  • 3 pieces of flank steak
  • 1 cup of sauteed spinach
  • 1 cup of sauteed mushrooms
  • 1/2 cup of feta cheese
  • a dash of salt, pepper, garlic powder and smoked paprika
  • tablespoon of olive oil

Directions:

1. Lay steak flat out on a sheet pan (uncooked).
2. Make sure you rub olive oil on the pan so that the steak won’t stick.
3. Layer sauteed spinach, mushrooms, and feta cheese.
4. Roll steak up (like a burrito) and hold together with a toothpick.
5. Top with seasonings and heat in oven at 350 degrees for 5-7 min (depending on what temp you would like your steak).
