My husband and mother in law

My husband and I were in Tampa for a wedding so we stopped by mother in law’s. She lives across the bay and we love spending time with her.  We decided to go for dinner at our favorite restaurant in the area – Crabby Bill’s.  We used to frequent there all the time when we lived in the area and always took our friends and family that came to visit.

My mom had a craving for raw oysters so that’s what she ordered as an appetizer. They were huge!

My husband ordered two orders of the garlic butter mussels.  Yes, two orders. They’re his all time favorite and he could probably eat more.

When they were done with their appetizers, the two of them also ordered frog legs.

I ordered the Bourbon BBQ Chicken.  The Bourbon BBQ sauce was amazing!  I dunked my chicken and my fries in it.  I would have dunked my finger in it too, but decided it was not appropriate 😉

The fries and vegetables were delicious too.

There is also an outside area to eat, but it was jam packed.

One of my favorite lunches is the Chicken Enchilada bowl above. It’s so easy to make and I even use real cream in it!  I know there’s this idea that diet food has to taste gross. Honestly, I used to believe it too.  I mean I’ve had some of those prepackaged and powdered meal and well, let’s say they leave a lot to desire.

I learned that they taste gross because they’re low fat. I mean have you ever tasted the difference between low fat and full fat anything?   When you take the fat out of food it doesn’t taste good anymore.

I have tried more than one diet that included packaged meals and they were awful. They looked really good but they tasted like cardboard and I got bored really fast. It was so hard to stay on the diet and it made me crave flavorful foods even more.

Paso Robles is on the central coast of California and it’s beautiful!  The temperatures were in the 6o’s and 70’s during the day and dropped to about the 50’s at night. The landscape was breathtaking.  You can drive up and down Highway 101 through the mountains overlooking the coast.

One of the wineries that I spent a bit of time at was Wild Horse Winery.  They have a vast variety of wine.  Two of my favorites were the Verdelho and the Malbec.

This is an extremely tasty wine with aromas of lemon, melon, peach, and apricot. Slightly off dry, the mouthfeel is full and intense but also light at the same time. Hard to explain so you’ll have to partake. With a lot to gain from tasting this wine, enjoy as an aperitif or with a light meal such as Caesar salad or a rustic cheese plate.

2011 Wild Horse Unbridled Malbec Pine Creek Vineyard Monterey County

Bright and boasting with aromas of blackberry, boysenberry, and clove followed by a medium bodied, well-balanced, and extremely tasty mouth feel. This wine will pair well with sticky barbecued beef ribs, carne asada tacos, and pasta with spicy marinara. Drink now until 2018.

The property is beautiful and the wine maker, Chrissy Wittmann, is extremely knowledgeable.  I had the opportunity to talk with and listen to her about the whole wine making process.  She also paired some excellent choices with some of the meals I ate.  I hear wine suggestions all the time but when you combine a knowledgeable chef with a knowledgable wine maker it makes a huge difference.

A perfect example of pairings was found at Thomas Hill Organics.  This beautiful salad was my favorite (all the courses were excellent).  Pairing the salad with the Pinot Grigio really enhanced the medley of flavors.

The dessert was so decadent and beautiful. At first I didn’t want to eat because of how beautifully displayed it was.  That thought was only temporary – I totally ate it and it was delicious!

Not only was I able to experience great food and wine, but I had some other fun activities. I was able to feed llamas at the Wild Horse Winery.  They love apples and they’re full of personality.

I also went horseback riding with the Madonna Inn.  I took the 1 hour trail ride that overlooked the city of San Luis Obispo.  It was so beautiful and relaxing.

When I look at my life I have to say I’m pretty fortunate. I don’t get everything I want and I don’t have brand new everything but I do have what I need including a roof over my head and food to eat. I also have quite a few non necessities like a vehicle, a phone, and more. I’m really blessed and I am truly thankful for that. In fact most of us have quite a bit to be thankful for.

Last month my friend, Beth Ann, from It’s Just Life challenged us to collect food for our local food bank, Hawkeye Harvest.

Hi, my name is Amy and I blog over at Modern Rural Living. One thing about me is that I like to classify myself as an aspiring foodie. I say aspiring because I am no gourmet chef and don’t have much time to travel and try new and exciting foods, writing food blogs and sharing recipes is my chance to express my inner food-loving self. :)

I didn’t just come by this naturally, what started out as an experiment with food has turned into a combination of science and art for my parents, who joined a gourmet food club more than 15 years ago.

My dad says cooking is a science because you take whatever is in season and mix it with spices and liquids to make something exciting for the taste buds. My mom says cooking is an art form because it’s all about presentation and eye appeal.

I believe their recipe for Mini Stuffed Pumpkins is a perfect union of science and art! Picture your table colorfully decorated with a bounty of gourds, pumpkins, bittersweet and acorns as the centerpiece; glasses of your favorite red, white or golden yellow wine; napkins and silverware tied together with twine next to a solitary plate holding the main course, a pumpkin stuffed with a delicious blend of savory and crunch.

My parents agree that cooking gourmet doesn’t have to be difficult. The most difficult thing about this recipe is cutting the top off of the pumpkin. The rest is easy – especially the clean up as you just throw the shPell away or toss into your compost pile.

Whether you make this fun dish for friends or family, be prepared for the “oohs” and “ahhs” as they experience both the presentation (art) and taste (science).

  • • 4 small pumpkins (approx 4”-5” high)
  • • 1 onion, chopped
  • • 2 Tbsp Vegetable Oil
  • • 1 lb. Hamburger
  • • 2 Tbsp Soy Sauce
  • • 2 Tbsp Brown Sugar
  • • 4 oz can mushrooms
  • • 1 can cream of mushroom soup
  • • 1.5 Cups Cooked Rice
  • • 4 oz Can Chopped Water Chestnuts
  1. Preheat Oven to 350°
  2. Cut off tops of pumpkins and clean out seeds.
  3. Sauté onions in oil until tender.
  4. Add hamburger, soy sauce, brown sugar, mushrooms, and soup.
  5. Simmer 10 minutes.
  6. Add cooked rice and water chestnuts.
  7. Fill pumpkins and place on a foil lined cookie sheet.
  8. Put tops on pumpkins.
  9. Bake 1 hour at 350°

Last month I was able to attend the Sunset SAVOR the food and wine festival. The main event was at the historic Santa Margarita Ranch in California.  I love cooking and was really excited to meet some of the chefs.  One of the celebrity chefs present was Tanya Holland.

Tanya Holland is the Executive Chef and Owner of Brown Sugar Kitchen and B-Side BBQ in Oakland, CA. Holland is  known for her inventive takes on modern soul food, as well as comfort classics. Her recipes are rooted in tradition.  She was trained in France.  She enjoys using great ingredients in hopes of finishing with a product that doesn’t destroy them.

She was so sweet and down to earth and apparently makes the best chicken in waffles.  I’ll be honest with you – I’ve never had chicken and waffles but I am intrigued.  I had a chance to sit down with her (and a few other journalists).  She talked with us about how “comfort food doesn’t go out of style”  and that’s why people come back to eat at her restaurant over and over.  She started her own restaurant with only one waffle maker thinking it would be a novelty item. Instead, it has taken on a life of it’s own.

When I think of comfort food I think of things that taste good but aren’t necessarily good for me.  We asked about the term “healthy soul food” since her cuisine has been referred to as such.  She said that she uses clean oils and sustainable meats. This creates food that is clean which makes it a healthier choice despite the cuisine.

My husband loves fried chicken so that’s the first recipe I started with.

I started by mixing the seasonings together tarragon, paprika, onion powder, kosher salt, ground pepper, garlic powder, dried oregano, thyme, and cayenne pepper.

I placed the chicken in a bowl and tossed them with the seasonings.

Then I poured the the buttermilk over the chicken and stuck it in the fridge overnight.

The next day I removed the chicken from the marinade and dredged it in the flour & salt mixture then fried and baked it.

It was so delicious! The chicken was super moist and flavorful.  I loved the little kick that the cayenne gave it. My husband had 6 pieces! I think it’s safe to say he enjoyed it.

  • 1 Tbsp. dried tarragon
  • 1 Tbsp. paprika
  • 1 Tbsp. onion powder
  • 1 Tbsp. plus 2 tsp. kosher salt, divided
  • 1 Tbsp. plus 1 tsp. ground black pepper, divided
  • 2 tsp. garlic powder
  • 1 tsp. dried oregano
  • 1 tsp. dried thyme
  • 1 tsp. cayenne pepper
  • 1 (3½-pound) chicken, cut into 8 pieces
  • 2 Tbsp. fresh minced parsley
  • 1 cup buttermilk
  • 1½ cups all-purpose flour
  • Vegetable oil for frying
  1. In a small bowl, mix together tarragon, paprika, onion powder, 2 tsp. salt, 1 tsp. black pepper, garlic powder, oregano, thyme, and cayenne pepper. Place chicken in a large bowl and sprinkle with spice mixture and parsley, tossing to coat. Pour buttermilk over chicken. Cover and refrigerate overnight.
  2. Remove chicken from marinade. In a large bowl, combine flour, remaining 1 Tbsp. salt, and remaining 1 Tbsp. black pepper. Dredge chicken pieces in seasoned flour.
  3. Pour oil into a large pot to a depth of 3" and heat over medium-high heat until a thermometer reads 350°. Add as many chicken pieces as possible without crowding the pan. Cook chicken pieces, turning occasionally and adjusting heat to keep oil at 350°, until cooked through, 12 to 15 minutes. Remove chicken to a rack and allow to rest 5 minutes before serving. Serve with cornmeal waffles with apple cider syrup.

I tried the Whole-food multivitamin shake complete. I was excited to try the line because I really liked the list of products they have. I chose this shake because I thought my husband and oldest son would enjoy it too. As a mom I want to give my family good healthy stuff!

I have tried it in a few different flavor smoothies, mixing it with water and with almond milk as well as putting it in my yogurt. I am sorry, I really, really wanted to like this product/flavor but did not. I think its because the taste was too strong? It was very overpowering–too much and not to my liking. My husband agreed but my son loved it all the ways that we have mixed it up.
